Ingredients

  • 3 oz. beef suet (from your butcher), chilled and coarsely grated
  • 1 <sup>1</sup>⁄<sub>2</sub> cups self-rising flour, plus more for dusting
  • 4 tbsp. unsalted butter, frozen and coarsely grated
  • 1 tsp. kosher salt
  • 2 eggs, 1 whole, 1 lightly beaten
  • <sup>1</sup>⁄<sub>3</sub> cup ice-cold water
  • <sup>1</sup>⁄<sub>4</sub> cup canola oil
  • 2 (2 1/2-lb.) rabbits, cut into 8 pieces each
  • Kosher salt and freshly ground black pepper, to taste
  • 4 tbsp. unsalted butter
  • 1 small yellow onion, minced
  • <sup>3</sup>⁄<sub>4</sub> cup flour
  • 4 cups chicken stock
  • <sup>1</sup>⁄<sub>3</sub> cup dry hard apple cider
  • 12 oz. fresh or frozen crawfish meat, plus 7 whole head-on crawfish
  • <sup>1</sup>⁄<sub>4</sub> cup heavy cream
  • 1 tbsp. minced parsley
