meat and potato mini quiche

Ingredients

• 12 foil baking cups
• 8 eggs, lightly beaten
• 1 lb ground beef
• 1 T olive oil
• 1 T butter
• 1 small onion, finely chopped
• 1 tsp garlic, minced
• 1 C red potatoes, diced
• 1 C cherry tomatoes
• 1 T parsley
• 1/2 tsp paprika
• 1/4 C green chile, chopped
• 1/4 C milk
• 1/2 C cheese, your choice
• salt and pepper, to taste
