• 250g sugar
• 2 tablespoons kirsch
• 1 teaspoon raspberry liqueur, optional
• 1 teaspoon cornflour aka cornstarch
• 2 tablespoons cocoa
• 1 teaspoon vanilla extract
• 1 pinch salt
• some grated dark chocolate, optional
• 100g 70% dark chocolate
• 50g sweet butter
• 6 egg yolks
• 4 tablespoons caster sugar
• 1 tablespoon Tia Maria
• 350ml single cream
• 250ml double cream
• 2 tablespoons icing sugar
• selection of red berries
