Spanish Chickpea Stew

Ingredients

• 3 tablespoons olive oil
• 2 teaspoons garlic, minced
• 2 cups onions, diced
• 2 teaspoons paprika
• 1/2 teaspoon cumin, ground
• 3 cups spinach, frozen, chopped
• 1 15-ounce can chickpeas, low sodium, drained and rinsed
• 1/2 cup golden raisins
• 1 1/2 cups chicken broth, low-sodium
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
• 1 cup diced tomatoes, canned, low sodium, drained
