Chili - Middlebury Food Co-op

Ingredients

• 2 cups dried kidney beans, soaked
• 2 T ghee, oil, or cooking fat
• 1 large onion, chopped
• 2 carrots, chopped
• 2 stalks celery, chopped
• 1 lg bell pepper, seeded & chopped
• 1 jalapeno pepper, seeded & chopped
• 3 cloves garlic, minced
• 1 lb ground beef (optional)
• 2 tsp chili powder
• 1 tsp cumin
• 1/4 tsp cayenne
• salt & pepper, to taste
• 3 C stock or water
• 1 28 oz can tomatoes
• juice of one lime
