• 2 large potatoes, peeled and cut into 2cm (1in) chunks
• 2 tbsp sunflower oil, plsu extra for the pork
• 1 tbsp cumin seeds
• 1 tsp dried chilli flakes
• 1 tsp tumeric
• 1 x 620g pack pork chops, fat scored
• 1 tbsp curry powder
• 200g cherry tomatoes, quartered
• ½ cucumber, chopped
• 1 red onion, finely chopped
• 1 x 30g pack coriander, roughly chopped
• mango chutney, to serve
