Maple-glazed chicken salad with peaches
This is not your average chicken salad. The clever addition of grilled peaches, drizzled with a balsamic-honey dressing, has us drooling.
Ingredients
- 2 tablespoons maple syrup
- 1 tablespoon balsamic vinegar
- 2 cloves garlic, crushed
- 1 tablespoon olive oil, plus extra to brush
- 4 small chicken breasts
- Sea-salt flakes and freshly ground black pepper, to season
- 1/3 cup pecans
- 1 tablespoon caster sugar
- 2 yellow peaches, quartered
- 100g mixed salad leaves
- 1 Lebanese cucumber, finely chopped
- 250g cherry tomatoes, halved
- BALSAMIC-HONEY DRESSING
- 2 tablespoons olive oil
- 1 teaspoon honey
