• 1 striploin beef roast, excess fat trimmed (1-5 lb. roast)
• 2 teaspoons Salt
• 2 tablespoons dijon mustard
• 2 tablespoons mixed whole peppercorns, coarsely crushed
• 1/3 cups shallots, minced
• 3 1/2 cups canned beef broth
• 1/3 cups cognac or brandy
• 1 cup heavy cream
• 1 tablespoon whole unsalted butter
