Ricotta and chilli-filled sweet peppers
Nici Wickes was inspired by the gorgeous cheese and jalapeño-filled peppers that are sold in markets in Mexico in this recipe
Ingredients
- 6 small peppers
- 200 gram ricotta cheese
- 100 gram feta (Nici used Puhoi Valley feta)
- 1 chilli, finely chopped
- 1 teaspoon lemon zest
- 2 tablespoon chives, chopped
- 2-3 tbsp olive oil
