- 225g/8oz unsalted butter , chilled
- 1 free-range egg , beaten, to glaze
- 10 quail's eggs
- 200g/7oz chestnut mushrooms , chopped
- knob of butter
- 100g/3½oz sun-blushed tomatoes
- 8 large pork sausages
- 200g/7oz black pudding
- 200g/7oz Parma ham
- oil spray to grease the baking tray
