  • 3/4 cup cold water (more as needed)
  • 1/4 cup brown sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch
  • 2 tablespoons unsalted butter, melted
  • 3 pounds Honeycrisp apples, (any baking apples will do) peeled and thinly chopped
  • 1 large egg white, beaten for the egg wash
