• 2 stalks celery, with leaves
• 1 medium onion, sliced
• 1-1/2 teaspoons salt, divided
• 1/4 cup butter, margarine, or chicken fat
• 2 Tablespoons flour
• 1/2 pound mushrooms, sliced
• 1 egg yolk, slightly beaten
• 3 Tablespoons cream
• 1 package (8 ounces) green noodles
• 6 slices mozzarella cheese
• 2 to 3 Tablespoons grated Parmesan cheese
• 1 Tablespoon butter or margarine
