Moqueca - Pacific Seafood
Moqueca is originally from Brazil. It's a fish stew with onion, tomatoes, chiles, and lime. We like to make it with Black Cod (Sablefish).
Ingredients
- 1 ½ lbs black cod (sablefish)
- ½ tsp salt
- 1 lime
- 2-3 Tbsp coconut or olive oil
- 1 onion, diced
- 1 cup carrot, diced
- 1Â red bell pepper, diced
- 4 garlic cloves, rough chopped
- ½ jalapeno, diced
- 1 Tbsp tomato paste
- 2 tsp paprika
- 1 tsp ground cumin
- 1 cup fish or chicken stock
- 1.5 cups tomatoes, diced
- 1 14 oz can coconut milk
- Salt to taste
- ½ cup chopped cilantro, scallions or Italian parsley
