Ingredients

• 1 tablespoon olive oil
• 1 onion, finely chopped
• 2 cloves garlic, finely chopped
• 1 (8-ounce) package chestnut mushrooms, sliced, can substitute baby bellas
• 1 tablespoon tomato purée
• 1 1/4 cups beef stock
• 1 teaspoon Dijon mustard
• 1 tablespoon smoked paprika
• 1 teaspoon dried Italian herbs
• 3/4 cup créme fraîche, can substitute sour cream
• 1 1/2 pounds leftover roast beef, cut into strips
• 2 tablespoons parsley, roughly chopped, for garnish
