Ingredients

  • 3 pears, peeled and diced
  • 3 cox apples, peeled and diced
  • 50g butter
  • 50g caster sugar
  • Splash of vodka
  • 200g plain flour
  • ½ tsp ground ginger
  • 100g butter, diced
  • 100g demerara sugar
  • 300ml milk
  • 300ml double cream
  • 2 vanilla pods or 1 tsp vanilla bean paste
  • 75g caster sugar
  • 8 egg yolks
  • Preheat the oven to 180°C.
  • Place the fruit into a pan with the butter and sugar, simmer for 5 mins until just soft. Pop into an ovenproof dish and splash over the vodka.
  • Mix the crumble ingredient together in a bowl using your fingertips until it resembles breadcrumbs, then sprinkle over the filling. Bake for 45 mins.
  • To make the custard, put the milk and cream in a pan with the vanilla and half of the sugar, warm through gently.
  • Whisk the egg yolks with the remaining sugar.
  • Pour the milk mixture over the yolk mix, and whisk together.
  • Transfer this to the pan, continuously whisking until it thickens, then whisk in the vodka and sieve off into a bowl.
