Tidy-up Risotto - Christmas Farm

Ingredients

• 400 g arborio rice
• 1.5-2 litres good stock Turkey stock is perfect
• 1 large glass white wine
• 50 g butter
• 1 large onion peeled and chopped. Or the same quantity of leek.
• 2 tbsp olive oil
• 2 cloves garlic large - peeled and chopped
• 400-450 g cooked turkey or goose or ham or bacon, chorizo etc etc.!
