Chicken Udon Noodle Soup

Ingredients

• 1 ½ containers (32 fluid ounce) of chicken stock
• 1 tablespoon of minced fresh ginger root
• 1 teaspoon of chili powder
• 1 clove of garlic, minced
• 1 large cooked skinless and boneless chicken breast, chopped
• 1 head of bok choy, chopped
• ¼ cup of dried shiitake mushrooms
• 2 packages (7 ounce each) of dried udon noodles
• ½ cup of mung bean sprouts
• 1 green onion, sliced diagonally
• 2 tablespoons of dried minced onion
• 1 tablespoon of chopped fresh cilantro
