Zucchini Soup: Fresh Vegetable Soup With A Middle Eastern Touch
Cumin is one of my favourite spices and it adds a lovely fragrant earthiness to this Middle Eastern zucchini soup.
Ingredients
- ⅓ cup extra virgin olive oil
- 1 red onion, finely chopped
- Salt flakes, to taste
- 6 zucchini, grated
- 2 teaspoons ground cumin
- 750ml water
- 250ml milk
- ½ cup natural yoghurt
- 1 tablespoon za'atar
