Ingredients

• 150 g white chocolate, chopped
• 80 g butter
• ⅓ cup caster sugar
• 2 eggs
• ¾ cup plain flour
• a pinch of salt
• 1 tsp baking powder
• 1 tsp vanilla extract
• ½ cup chopped almonds
• 50 g white chocolate or white chocolate chips, chopped
• 300 g rhubarb, cut into 2 cm pieces (do not peel)
• 30 g sugar
• 250 g full-fat or semi-skimmed curd cheese, finely ground
• 2 egg yolks (from large eggs)
• 40 g sugar
• 1 tsp vanilla extract or 8 g vanillin sugar
