Ingredients

• 1 red onion in thin half rings
• 1 tsp coarse salt
• 200 g country bread sliced
• 100 g Castello® Greek Style Cheese Cubes in Brine 430g
• 100 g baby spinach
• 1 tbsp cold-pressed colza oil
• 1 cucumber cut into sticks
• 250 g frozen, thawed edamame beans (soy beans)
• 2 finely chopped fresh fresh mint leaves
• 2 tsp finely grated lemon zest
• freshly ground pepper
• 500 g grilled chicken fillet or salmon fillet
