Frozen Raspberry Cheesecake

Ingredients

• 1-200g pkg Almond Amaretti cookies, finely crushed
• 1/4 cup (50 mL) melted butter
• 1 egg, separated
• 1 cup (250 mL) real Whipping Cream
• 2-250g pkgs cream cheese, softened
• 2/3 cup (150 mL) icing sugar
• 1 cup (250 mL) frozen raspberry juice concentrate, thawed
• 1/2 tsp (2 mL) almond extract
