Orange Chicken

Ingredients

• 2 eggs
• 2 teaspoons water
• 1 cup breadcrumbs or matzah meal
• 1 tsp salt
• 1/8 tsp pepper
• Two 3-pound fryers, cut up
• ½ cup vegetable oil
• 1 cup hot water
• ¼ cup honey
• 1 cup orange juice
• 2 tbsp grated fresh ginger or ¾ tsp ground ginger, or to taste
