Ingredients

• Enough pastry for a 9-inch (23 cm) double crust pie, homemade or store-bought
• 1 lb (500 g) ground turkey
• 1 onion, chopped
• ¼ cup (50 ml) red pepper, chopped (optional)
• 1 tbsp (15 ml) olive oil
• 1 tbsp (15 ml) fennel seeds
• 1 tbsp (15 ml) dried basil
• 1 tbsp (15 ml) dried oregano
• ½-¾ tsp (2-3 ml) crushed red chili peppers
• 10 oz (300 g) frozen spinach, thawed, chopped and drained
• 7 oz (200 ml) tomato sauce
• 1 egg, beaten
• 1 cup (250 ml) shredded Cheddar cheese
• ¼ cup (50 ml) grated Parmesan cheese
