Ingredients

• 2 tbsp oil, for frying
• 1 onion, diced
• 1 large leek, washed, trimmed and cut into roughly 1cm dice
• 4-5 fresh sage leaves, finely chopped
• 3 garlic cloves, sliced
• 400g leftover cooked turkey, shredded
• 1 tsp Dijon mustard
• 2 tsp cornflour
• 1 chicken stock cube, made up to 350ml
• 400g tin cannellini beans, drained and rinsed
• 10g fresh flat-leaf parsley, roughly chopped
• 500g pack puff pastry
• 1 egg, beaten
