Louisiana Jambalaya - Olive Oils from Spain
The cajun culture is one of the most unique in the world, having developed from French roots in Southern Louisiana.
Ingredients
- 3 tablespoons of extra virgin olive oil from Spain
- 2 tablespoons of cajun seasoning
- 10 ounces andouille sausage, sliced into rounds
- 1 pound boneless skinless chicken breasts or thighs, cut into 1 inch pieces
- 1 onion diced
- 1 small green bell pepper, seeded and diced
- 1 small red bell pepper, seeded and diced
- 2 stalks/ribs celery, chopped
- 4 cloves garlic, minced
- 14 ounces can crushed tomatoes
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon each dried thyme and dried oregano
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon hot pepper sauce
- 2 teaspoons Worcestershire sauce
- 1 cup thinly sliced okra
- 1 1/2 cups uncooked white rice
- 3 cups low sodium chicken broth
- 1 pound raw shrimp/prawns tails on or off, peeled and deveined
