• 2 lbs Brioche Rolls
• 1 package Bread Pudding Mix
• 1 qt IQF Dragon Fruit
• 2 cups Dried Cranberries
• 14 fl oz Coconut Milk (2)
• ¼ lb Fresh Mint
• 6 Egg yolks each
• ½ cup Sugar
• 1 tsp Mint Extract
• 12 drops Green Coloring
• 1 tsp Cornstarch
• 1 qt Dragon Fruit (thawed pureed)
• 1 package Vanilla Mousse Mix
