Curried sausage tray bake – Vegan Eat

Ingredients

• 1 Red onion (1/2 cut into wedges 1/2 finely chopped)
• 100 g Kale (Shredded)
• 2 tbsp Tomato puree
• 2 tbsp tomato ketchup
• 2 tsp Smoked paprika
• 1 tbsp Curry powder
• 2 Garlic cloves (Crushed)
• 1 Sweet potato (Chopped into bits sized pieces)
• 2 White potatoes (Chopped into bits sized pieces)
• 1 tbsp Henderson's relish
• 6 Vegan sausages
• 200 ml Boiling water
