Ingredients

• 7 oz (200 g) puff pastry dough
• 1 egg, lightly beaten
• 1 lb (454 g) veal sweetbreads
• 2 tablespoons (30 ml) butter
• 1 tablespoon (15 ml) flour
• 1/2 cup (125 ml) port
• 1/2 cup (125 ml) chicken broth
• 1/4 lb (115 g) shiitake mushroom caps, thinly sliced
• 1/4 lb (115 g) oyster mushrooms, thinly sliced
• 1 shallot, finely chopped
• 2 tablespoons (30 ml) olive oil
• 1 clove garlic, chopped
• 1 teaspoon (5 ml) freshly chopped ginger
• 1 Italian tomato, diced
• Salt and pepper
• 1 cup (250 ml) lamb’s lettuce (mâche) or baby arugula
