Honey spice sponge cake
All this layered honey cake needed to take it from tasty to ridiculously delicious was just a touch of mixed spice and lashings of honeyed cream. You'll love it
Ingredients
- 2 eggs
- 1/2 cup (110g) caster (superfine) sugar
- 1/3 cup (50g) wheaten cornflour (cornstarch)
- 1 1/2 tablespoon custard powder
- 1 teaspoon mixed spice
- 1/2 teaspoon cream of tartar
- 1/4 teaspoon bicarbonate of soda (baking soda)
- 1 1/4 cup (310ml) thickened (heavy) cream
- 2 tablespoon honey
- 1 tablespoon icing (confectioners') sugar
