Ingredients

• 600 g pork mince
• 2 brown onions, diced
• 1 tbsp Dijon mustard
• 2 tbsp fennel seeds, plus extra for sprinkling
• 1 tsp sea salt
• Freshly ground pepper
• 3 sheets of frozen puff pastry sheets, defrosted
• 1 egg, for brushing the rolls
• Olive oil, for cooking
• 3 red onions, cut in half and thinly sliced
• 2 granny smith apples, cored and chopped roughly
• ⅓ cup red wine vinegar
• 2 tsp salt
• 5 dates
• 5 tbsp brown sugar
