Sweet Potato Dahl | Rafferty's Garden

Ingredients

• 1 cup of dried split red lentils
• 1 tbsp of olive oil
• 1x small onion, finely diced
• Pinch of salt
• 1 tbsp of ground turmeric
• Pinch of ground cinnamon
• 2x gloves of garlic, crushed
• 2 cups of diced sweet potato
• 3.5 cups of reduced salt chicken or vegetable stock
• 2x Rafferty's Garden Red Lentil, Carrot & Sweet Potato
• Salt and cracked pepper for seasoning
• Steamed rice and parsley to serve
