Orange butter lettuce salad with walnuts and feta | Something New For Dinner
This fresh and easy salad is a great accompaniment to many dishes. It is flavorful, but does not compete. I like to make it with Cara Cara oranges when I can find them.
Ingredients
- 2 oranges, preferably Cara Cara
- 2 heads butter lettuce, washed, spun and leaves torn into bite-size pieces
- 1 T Spanish sherry vinegar
- 1/2 shallot, minced
- 3 T walnut oil
- Salt to taste
- Pepper to taste
- 2 ounces feta cheese, crumbled
- 1/2 cup walnuts, toasted
