Ingredients

• 2.5 lbs ground buffalo meat
• 3 Jalapeno peppers
• 3 Serrano chili peppers
• 1/3 cup chopped red onion (approx 1/4 red onion)
• 1/4 cup fresh cilantro, divided
• 6 large garlic cloves
• 1/2 cup Sutter Home cabernet sauvignon
• 3 Tbs hot sauce
• 1.5 Tbs salt
• 1.5 Tbs freshly ground black pepper
• 2 avocados
• 5 Tbs mayo
• Zest of 1 lime
• Vegetable oil, for brushing on grill rack
• 6 slices pepper jack cheese
• 6 Kaiser Rolls
