  • 1 pound Idaho® potatoes, peeled and cut into thin fries
  • vegetable oil for frying
  • 2 pounds flap steak (carne asada) or skirt steak
  • 1 teaspoon salt
  • 1 ½ teaspoons black pepper
  • 1 ½ teaspoons granulated garlic
  • 1 ½ teaspoons granulated onion
  • 1 ½ teaspoons paprika
  • ½ teaspoon dried oregano
  • 1 tablespoon Worcestershire sauce
  • 1 ½ cups sharp cheddar cheese, shredded
  • 1 ½ cups Monterey jack cheese, shredded
  • 2 tomatoes, diced
  • 1 cup guacamole
  • ¾ cup sour cream
  • ¼ cup sliced pickled jalapeños, optional
