Ingredients

  • 1 ½ pounds pork loin shoulder or butt
  • 1 large onion, chopped
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 bay leaf
  • 2 cloves garlic
  • 1/2 tsp dried oregano
  • 1 tsp cumin
  • 4 dried California Chile pods
  • 2 cups reserved pork broth
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tbsp oil (vegetable or canola oil)
  • 1 tbsp all-purpose flour
  • 1/4 tsp salt
  • 4 cups masa harina (I like to use Maseca brand)
  • 3 cups vegetable or chicken broth
  • 2 tsp baking powder
  • 1 ⅓ cups lard
  • 8 oz package dried corn husks
  • 1 lb tomatoes, (3-4 medium), diced
  • 1 cup chopped onion
  • 1 jalapeño pepper, seeded and finely minced (optional)
  • 1/2 cup cilantro, chopped
  • 2 tbsp lime juice
  • 1/2 tsp salt, or to taste
  • 1/8 tsp black pepper
  • Avocado slices, optional garnish
  • Fresh cilantro, optional garnish
