- 400 ml Coconut Milk
- 4 slices Crusty Bread to serve
- 2 cloves Garlic finely chopped
- 1/2 tsp Ground Black Pepper
- 1 Lime zest and juice
- 2 small Onion finely chopped
- 1 1/2 tsp Salt
- 1 pinch SuperValu Chilli Flakes to garnish
- 1/2 SuperValu Fresh Red Chilli or green, deseeded and finely chopped
- 2 tbsp SuperValu Oil
- 2 large Sweet Potatoes (approx 850g), scrubbed well
- 1 L Vegetable Stock
