- 1½ kg Tomatoes
- 2 red onions chopped into quarters
- 1 full garlic bulb (top cut off)
- 1 tsp salt, pepper
- 1 tbsp olive oil
- 1 cup vegetable / chicken stock
- 1 tsp chilli flakes
- 1 tsp thyme
- 1 tsp oregano
- ½ cup cream (leaving some to serve)
- salt & black pepper to taste
- fresh basil to serve
- 2 slices of Bakers Delight Sourdough Vienna per person
- 1 cup grated mixed cheese
- 2 tbsp butter (per toastie)
