Ingredients

• 1 1/2 cups (375 ml) 35% heavy cream
• 1 cinnamon stick, about 3 inches (7.5 cm) long
• 1 tsp (5 ml) vanilla extract
• 2 cups (420 g) sugar
• 1/4 cup (60 ml) water
• 1/4 cup (60 ml) light corn syrup (see note)
• 1/2 cup (114 g) unsalted butter, softened
