• 3 tablespoons (45 ml) ice cold water
• 1/4 cup (60 ml) water
• 1 cup (250 ml) sugar
• 1/2 cup (125 ml) 35% cream, hot
• 6 tablespoons (90 ml) 35% cream
• 6 oz (170 g) milk or dark chocolate, chopped
• 14 pecan halves, toasted (optional)
