FODMAP-friendly spinach feta rolls (gluten free, nut free option) - George Eats
FODMAP-friendly spinach feta rolls that are gluten free and have both a nut free or vegan option. The perfect freezer food!
Ingredients
- 500g frozen chopped spinach, defrosted and thoroughly squeezed of excess liquid
- 200-250g Greek style feta, crumbled
- 50g spring onion greens, chopped
- 1/2 - 1 cup mixed herbs (dill is a must, but I also like using some parsley)
- Freshly cracked pepper and chilli flakes, to taste
- Lemon juice and zest, to taste
- 1/4 - 1/2 teaspoon ground nutmeg (or to taste if you are grating it fresh)
- 1 teaspoon dried oregano (optional)
- 2 extra large eggs
- 1/4 cup toasted and chopped pine nuts (optional)
- 1 batch gluten free puff pastry from Intolerance Friendly Kitchen (or two store bought sheets)
- 1 egg for egg-wash (optional)
- Sesame seeds, for the tops (optional)
