Ingredients

  • 500g frozen chopped spinach, defrosted and thoroughly squeezed of excess liquid
  • 200-250g Greek style feta, crumbled
  • 50g spring onion greens, chopped
  • 1/2 - 1 cup mixed herbs (dill is a must, but I also like using some parsley)
  • Freshly cracked pepper and chilli flakes, to taste
  • Lemon juice and zest, to taste
  • 1/4 - 1/2 teaspoon ground nutmeg (or to taste if you are grating it fresh)
  • 1 teaspoon dried oregano (optional)
  • 2 extra large eggs
  • 1/4 cup toasted and chopped pine nuts (optional)
  • 1 batch gluten free puff pastry from Intolerance Friendly Kitchen (or two store bought sheets)
  • 1 egg for egg-wash (optional)
  • Sesame seeds, for the tops (optional)
