- ¾ cup olive oil, divided
- 1 tablespoon Dijon mustard
- 2 tablespoons red wine vinegar
- ¼ cup maple syrup
- ½ green pepper, diced
- ½ red onion, diced
- 1 small handful fresh parsley, stems removed and coarsely chopped
