• 2 chopped, long red chillies, optional
• 3 garlic cloves, peeled
• 3cm piece of ginger, peeled & thickly sliced
• 3 candlenuts (kemiri) or macadamias
• 2 tsp Spice Fusion Indonesian Curry blend
• 3 kaffir lime leaves, rolled into a bundle and finely shredded
• 2 tsp sesame oil
• 1 tbsp vegetable oil
• 1 tbsp palm sugar or dark brown sugar
• Sea salt
• 600g chicken breast fillets cut into cubes
• 1 tsp kecap manis (sweet soy)
