Ingredients

• 1 1/2 pounds (750 g) sweet potatoes peeled and cut into 1-inch (2.5 cm) cubes (about 1 L)
• 1 large red bell pepper cut into 1-inch (2.5 cm) chunks
• 1 medium red onion cut into 1/2-inch (1 cm) chunks
• 1 tbsp (15 ml) oil
• 1 package (35 g) taco seasoning mix
• 1 cup (250 ml) cubed ham
• 5 eggs
• 2 tbsps (30 ml) finely chopped fresh cilantro
