Tropical Shrimp Ceviche – Fustini's Oils & Vinegars

Ingredients

• 1 pound raw shrimp, peeled, deveined, tail off
• Juice from 1/2 of lemon
• Juice from 1 lime
• 2-3 cloves garlic, minced
• 1/3 cup red onion, chopped
• 1/2 cup pineapple, chopped
• 1/4 cup green onion, chopped
• 1/4 cup cilantro, chopped
• 1 red bell pepper, chopped
• 1 mango, peeled and chopped
• 1 avocado, peeled and chopped
• 1 jalapeno pepper, seeded and chopped
• Mango Reduction
• Salt and pepper to taste
