Ingredients

• 1 tbsp olive oil
• 25g/1oz butter
• ½ onion, sliced
• 1 garlic clove,chopped
• 70g/2½oz mixed wild mushrooms, chopped
• splash white wine
• 3 tbsp double cream
• salt and freshly ground black pepper
