Italian Sausage Soup with Tortellini

Ingredients

• 1 lb Italian sausage, casings removed
• 1 tsp Colavita Extra Virgin Olive Oil
• 1 cup chopped onion
• 2 cloves garlic, sliced
• 4 medium tomatoes, peeled, seeded and diced
• 1 cup sliced carrot
• 5 cups Rachael Ray All-Natural Beef Flavored Stock
• 1 cup Colavita Tomato Basil Sauce
• ½ cup water
• ½ cup red wine
• 1 tsp dried basil
• ½ tsp dried oregano
• 8 oz frozen tortellini (meat or cheese)
• 1 cup zucchini, sliced
• 1 medium green bell pepper, ½ inch dice
• 3 tbsp fresh parsley
• Salt
• freshly ground pepper
• Parmesan cheese
