Ingredients

  • 12 oz. ground pork
  • 1 <sup>1</sup>⁄<sub>2</sub> tbsp. shaoxing jiu (Chinese rice wine)
  • 1 tbsp. sugar
  • 1 tsp. kosher salt
  • 1 scallion, minced
  • 1 (1") piece ginger, peeled and minced
  • 6 oz. fresh, frozen, or dried yuba sheets (2–4 sheets, thawed, if frozen; reconstituted in cold water, if dried), cut into eight 6" squares
  • 1 large dried bamboo leaf, soaked in boiling water until soft, drained
  • Kitchen string, for tying
  • 4 cups chicken stock
