• 3 Shady Brook Farms® Sweet Italian Turkey Sausages, casings removed
• Cooking spray
• 1 large onion, peeled and diced
• 1 cup low-sodium chicken broth
• 1 (15 oz.) can diced fire-roasted tomatoes
• 1 15 oz.) can chickpeas, drained and rinsed
• 1/4 tsp. Italian seasoning
• 6 oz. fresh baby spinach or torn fresh spinach leaves, about 4 cups
• Salt and freshly ground pepper to taste
• Grated parmesan cheese
