Ingredients

• 3 medium tomatoes, seeded and chopped
• 1 bunch radishes, trimmed and diced
• 1 cup frozen corn, thawed
• 1/2 cup minced fresh cilantro
• 1 small red onion, chopped
• Juice of 1 medium lime
• 1 tablespoon honey
• 1 tablespoon olive oil
• 1 package (16 ounces) fresh whole mushrooms, coarsely chopped
• 1 medium onion, halved lengthwise and sliced
• 2 to 3 garlic cloves, minced
• 2 to 3 teaspoons ground cumin
• 4 ounces Clock Shadow Creamery Queso Menonita cheese (1 cup)
• 1 tablespoon truffle oil, optional
• Salt and pepper to taste
• 8 flour tortillas, warmed (8 inches)
