- 750 grams squid hoods, (8 nedium squid hoods)
- 1/2 cup rice flour
- 1 Teaspoon sea salt
- 1 Tablespoon white pepper
- 2 teaspoons cracked black pepper
- 1 teaspoon cayenne pepper (optional)
- lime wedges, to serve
- 2 egg whites
- SWEET CHILLI DIPPER:-
- 1/3 cup sweet chilli sauce
- 1 lime, juice of
- 1 cm piece ginger, peeled and finely grated
